Creamy goat-cheese dressing and crunchy pistachios give great texture and flavor to this spring salad.

Ingredients
- 4 oz. goat cheese
- 1/2 cup low-fat buttermilk
- 2 Tbsp. Apple-Cider Vinegar
- 1 Tbsp. Honey
- 1 tsp. salt
- 4 cups mixed baby lettuces (such as 'Little Gem' and baby romaine)
- 1/2 cup roasted and salted pistachios
- 1/4 cup Fresh tarragon leaves
- 4 tsp. coarsely crushed pink peppercorns
Directions
- Step 1In a food processor, purée goat cheese, buttermilk, vinegar, honey, and salt until smooth. Refrigerate dressing until ready to serve.
- Step 2Divide lettuces among 4 salad plates. Drizzle each serving with 1/4 of the dressing and sprinkle with pistachios, tarragon, and peppercorns.
